Fifteen Years of From-Scratch Cooking

When we opened the doors of El Gallo De Oro in 2011, we had one simple promise: every dish would be made from scratch, every single day. No shortcuts, no pre-made sauces, no frozen ingredients.

Fifteen years later, that promise hasn't changed. Our salsas are still ground fresh every morning. Our rice is still seasoned by hand. Our tortillas are still warm when they reach your table.

The Beginning

It started with a small kitchen on Ocean Avenue and a family recipe book that had been passed down through generations. We didn't have a big budget or a marketing plan. What we had was good food and the belief that if we made it right, people would come.

They did. First the neighbors, then word spread through Greenville, then across Jersey City. "Have you tried El Gallo De Oro?" became something people said to each other.

What "From Scratch" Really Means

When we say from scratch, we mean it. Our mole sauce takes hours to prepare. Our carnitas are slow-cooked until they're perfectly tender. Our guacamole is made fresh throughout the day — never from a tub, never from a mix.

It would be easier to take shortcuts. It would be cheaper to use pre-made ingredients. But that's not why we opened this restaurant. We opened it to share the food we grew up eating — the food our family makes at home.

Looking Forward

Fifteen years is a long time in the restaurant business. We've seen the neighborhood change, we've watched our customers' kids grow up, and we've served more plates of enchiladas than we can count.

But the food hasn't changed. The commitment hasn't changed. And the love we put into every dish — that will never change.
